Simple Aloo Gobhi Sabji
This simple homemade aloo gobhi is comforting, flavorful, and easy to pair with roti or rice.
For extra protein, you can knead some tofu or paneer into the atta while making rotis.
It stores well in the fridge for 3–4 days, making it great for weekday meal prep.
You can reheat it quickly on the stove or in a pan with a splash of water if needed.
The flavors deepen over time, making leftovers even more delicious.
It also works well inside wraps, sandwiches, or stuffed parathas.
Ingredients
- 2 potatoes (cubed)
- 1 small cauliflower (cut into florets)
- 1 onion chopped
- 1 tomato chopped
- 1 tsp ginger garlic paste
- 1 tsp cumin seeds
- ½ tsp turmeric
- 1 tsp coriander powder
- ½ tsp chili powder
- Salt to taste
- 1–2 tbsp oil or ghee
- Coriander leaves
Method
- Heat oil or ghee in a pan and add cumin seeds.
- Add onions and sauté until soft.
- Add ginger garlic paste and cook for 1 minute.
- Add tomatoes and spices. Cook until soft.
- Add potatoes and cauliflower. Mix well.
- Cover and cook on low heat until vegetables are tender, stirring occasionally.
- Garnish with coriander leaves.
This sabji pairs well with roti, paratha, rice, or wraps and stores nicely for meal prep.
